Fruit Pasta Salad with Fanciful Fruit Gemelli


1 lb Fanciful Fruit Gemelli

1 cantaloupe, cut into bite-size chunks

1 pt strawberries, thickly sliced 

2 kiwi, sliced or chunked

1 lb red seedless grapes, cut in half

2 limes, juiced

2 T honey

5 mint leaves, cut into thin ribbons


Cook pasta until al dente, drain, rinse well with cold water and set aside.  Add all fruit to pasta and toss. Combine lime juice and honey, blending well. Pour over mixture and combine well. Sprinkle the top with mint leaves right before serving.


This recipe makes so much more than you might anticipate so use a large bowl. Cover and refrigerate for 1-2 days depending upon the ripeness of the fruit.
